Homemade Pancake Recipe

Yeah, I know, a pancake recipe is more than a little bit out of place on an advertising website.
Ever since I started my own business and primarily working from home, I’ve taken on the role of head breakfast chef.
My job is to get the kids out the door and off to school with full bellies. I’ve spent quite a bit of time researching, tweaking and perfecting this and I think it just might be the best pancake recipe ever. Let me know what you think!
Prep: 5 minutes
Cook: 15 minutes
Yield: 6 servings
Ingredients:
1 ¾ cups milk
2 eggs
½ teaspoon vanilla
¼ cup butter (melted)
2 cups flour
¼ cup brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
In a large bowl, sift together flour, baking powder, baking soda and salt. Stir together. Measure brown sugar and set aside.
*Tip: try mixing 1 cup of all purpose flour with 1 cup of cake flour
Melt butter in the microwave. In a medium bowl, mix melted butter with milk, eggs, and vanilla. Whisk together.
*Tip: separate egg white from egg yolk and set egg white aside
Combine wet ingredients with dry ingredients and mix together. If you have set aside the egg white, whisk vigorously until it becomes creamy and add it to the batter and mix together. Add brown sugar last and fold in.
Heat a lightly oiled griddle to medium-high (I use 325 degrees) and pour approximately ¼ cup of batter for each pancake.
*Tip: Sprinkle turbinado sugar on top of the uncooked side of each pancake before flipping to give them a nice sweet crunch.
